It's a display of power and her personality. Blue 火, 消防 burns hotter than red. If I remember correctly the creators 说 she's able to bend blue 火, 消防 because of her cold manipulative mind frame. It has also been 说 that it burns hotter and is there for blue because of her mastery of lightningbending.
