A vampire's humanity?

I was just wondering a few things about a vampire's humanity. Is it a voluntary thing 或者 do they eventually get desensitized and stop feeling? How many times did Stefan and Damon turn off their humanity? And how do 你 know it was off? How about other 吸血鬼 on the show?
