I don't think they'll return to their original form until they're back in the fairy tale world. We know Rumpelstiltskin brought the magic back, but we don't know if it's has powerful as it was in the fairy tale world or if it's limited because they're in our world.

Logistically, it would be harder and more time consuming and expensive for Archie to always be a cricket, Rumpel to always have that goblin look, etc.
