Besides, Disney already did the Incas and the Mayans and Aztecs are too violent for Disney to do an accurate representation of their civilizations in a family film.

You do realize that if there was a princess who was Mayan, Aztec, or Incan (before the conquest I presume), she would't really be hispanic, right?
